Recipe Challenge: Tropical Fish Stew

This is my Tropical Fish Stew. Its a healthy low fat, low carb one dish comfort food meal.
4 catfish fillets cut into 1 inch chunks
1 leek finely sliced
1/2 can light coconut milk
1 can diced tomato
1.5 cups dried beans
tsp cumin
1.5 tblsp dried parsley
salt
